Valentine's Day Chocolate Raspberry Cheesecake

Valentine's Day used to mean long, romantic dinners at nice restaurants with wine, dessert, and flowers. Now, though, at least for those of us with kids, the idea of getting a sitter in the middle of the week just to sit in an overpriced restaurant is absolutely not worth the trouble.

What a lot of us do, then, is the at-home Valentine's dinner. Dim the lights, light some candles, break out the nice china and glassware, and make your favorite dinner -- complete with Chocolate Raspberry Truffle Cheesecake for dessert. Lo and behold, you've got a very nice Valentine's Day for a lot cheaper than you would if you'd gone out.

Chocolate Raspberry Truffle Cheesecake (adapted from Cooks.com)

Crust:
•1 1/2 cups crushed Oreos, about 18
•2 tbsp. butter, melted

Truffle mixture:
•1 pkg. (6 oz.) semi-sweet chocolate chips
•1 pkg. (8 oz.) cream cheese, softened
•1/3 cup seedless raspberry preserve

Filling:
•3 pkg. (8 oz. each) cream cheese, softened
•1 cup sour cream
•1 1/4 cups sugar
•3 eggs
•1 tsp. vanilla

Glaze:

•2/3 cup semi-sweet chocolate chips
•3 tbsp. whipping cream

1. Heat oven to 325 degrees.

2. For crust: Combine cookie crumbs and butter. Press mixture firmly over bottom of a 9-inch springform pan.

3. For truffle mixture, melt chocolate chips in small saucepan over very low heat, stirring until smooth (you can also do this carefully in the microwave). Remove from heat after chocolate melts. Beat one 8 oz. package cream cheese in small bowl until fluffy. Gradually beat in raspberry preserves and melted chocolate; set aside.

4. For filling, beat three 8 oz. packages cream cheese in large mixer bowl until fluffy; beat in sour cream and sugar. Add eggs and vanilla; mix well. Pour into prepared pan. Drop truffle mixture by spoonfuls over top of filling, being careful not to swirl mixture. Bake until set, 75 to 90 minutes. Cool completely on wire rack.

5. For glaze, melt chocolate chips with cream over very low heat; stir until smooth. Spread over top of cheesecake; let some drizzle over side. Refrigerate until thoroughly chilled, several hours or overnight.

6. If desired, just before serving, garnish with dollops of whipped cream and fresh raspberries.

Continue regular Prayer and Scripture study, both individually and as a family

Study the Saviors Life and Learn of Him and what he did

Perform meaningful acts of Service to your fellow men

Have old Traditions and crate new ones

Always set priorities – Plan what is most meaningful
 and enjoyable to you and your family

Make quite time, slow down – Say No!!

Cut back of gifts and activities

Make a budget and Don't over spend

Do what you can and let go of the rest



It is very hard for a Starving Spirit to Experience Joy.

Welcome to Feel Good Friday! ~ 5 Good Things


I love this idea!!

I have found that a lot of my bloggy friends reading posts about being positive, so I thought I might try my very own meme.  I just want everyone to feel good and have some happy thoughts as you begin the weekend.

5 things that made me really happy this week.

1) Monday was Memorial Day; I could not help but think about the freedom we enjoy. There are so many who have given their lives for what we have. Donny put our American Flag out in the front yard. It made happy to watch it blow gently in the spring breeze and for what it represents. As I enjoyed a great BBQ with my family I know that I am truly blessed.    

                                                            
2) The weather this week has made a turn. We have had a very cold and rainy spring. This week we have had blue skies with puffy white clouds. I love feeling of the sun on my face.

3) Something that makes me happy, this week and every moment for just over two months is my new grandbaby. Her amazing blue eyes, her wonderful smile, her yummy rolls and cheeks. Babies are the closest thing to heaven we can get.


4) My in-laws have been in town for two family weddings, what has become a tradition for our family when Grandpa comes to visit is he takes my kids shopping for shoes. It makes my heart happy to see my kids in their new shoes. Thank you Dad.

5) Another thing that has made my heart happy this week is to see one of the dreams for my daughter Alissa happen. Alissa dances on the BYU Ballroom Team and is in Blackpool, England at the Blackpool Dance Festival (World Championships) The Standard Team competed on Wednesday (June 2nd) and Won and now The Latin Team competes today (June 4th) Alissa is on the Latin Team. Go Alissa , Go BYU, Represent for the USA!!

Memorial Day - At the Races! - 5/31/10

We had a very nice Memorial Day; we enjoyed a great BBQ and then went to the Rocky Mountain Raceway to watch the races, Thank you to the Hall family we were able to attend and we had a great time!

Qivana has a car it races in the Rocky Mountain Challenge Series Late Models – it is owned by HALL Motorsports - and it is the metaboliq car for Qivana. Derek Hall is the CEO of Qivana and has had a race team for years.

Memorial Day Table - StoneGable

Red, White and Blue, Patriotic True!


Memorial Day was originally called Rememberance Day.  First established to honor and remember soldier's who had lost their lives in the Civil War. Their graves were decorated with flags and flowers to remember them and their ultimate sacrifice.


Rememberance Day was later changed to Memorial Day and remains a day to honor American men and women who have given their lives so we can be a free nation!
~

At StoneGable we will mark this day with a trip to a beautiful National Cemetery where my father is laid to rest and honor his memory with prayers and flowers. And then back to our home for a family barbecue to live out his legacy.


The inspiration for this table is our wonderful "Old Glory"! My heart sings when I see our flag. Being raised in a military family made me keenly grateful to be an American!


Happy Memorial Day! Remember our men and women who serve and keep us safe! God Bless America!

Lake Powell - 4th of July Weekend - 2009

We went to Lake Powell over the 4th of July weekend. We had a blast. That was the first time we had ever been there. We went to the Wahweep Marina just outside of Page AZ. It is so amazing and beautiful. The Hall family invited us to their house boat and welcomed us in as family. We play hard, ate great food, swam and danced.

It was funny if you used your cell phone at one end of the boat you would get Utah time and service and if you moved to the other end of the boat you would get AZ time and service.

On the 4th of went off the boat and climb up a huge rock and sat on top where we could see the fireworks being shot off in Page, as we were returning to the boat, Ashley was almost bit by a rattle snake, thank goodness for Greg Hall, who caught the snake and killed it.

Flash Back Friday - Christmas

As I share more memories of Christmas past. I came across this picture. I didn't even remember this picture. But I do say I am looking pretty sassy. As you can see in the picture we had a good sized stone fireplace, like many we would hang our stockings up on it each year. What you can't see is in the middle of the fireplace is some of the stones opened up leaving a gap. Dad would make these huge fires, which I loved!! We always had the glow of a fire going. One year my stocking caught fire, so instead of ripping it down and stamping the fire out, my Dad grabbed the whole stocking and tossed it into the fire and it burned. I was devastated!! It was blue (my favorite color), with a print of poinsettias and an angel on it. It was gone!! Never did I see a similar stocking again.

I love looking at old photos; there are time capsules, moments captured in time. Christmas has always been a magical time for me. My Mom would set the scene, the glow of the fireplace, the twinkling of the Christmas lights on the tree, I would lay under the tree and would listen to the bulbs, make a "dink, dink" noise as the bulbs would twinkle on and off. The colors would reflect off the tinsel, it was beautiful. We had wonderful memories of going down Christmas Tree Lane, going to Cobb Tree Farm to cut a tree, having a hayride and eating fresh pistachios by the fire. Christmas music would play all day and night, It was a big part of adding to the Memories. We would go the local True Value Hardware Store to pick up the new Christmas album for that year.
