Family Favorites
Banana Bread
1 ¾ cup of flour
½ Tablespoon of baking powder
½ teaspoon of baking soda
½ teaspoon salt
½ cup of butter
1 cup of sugar
2 eggs
3 bananas - mashed
½ cup of nuts (optional)
Mix all ingredients together
Put into 4 mini loaf pans or the large loaf pan
Bake at 325 - for 45 - 50 minutes in mini pans
or 1 hour for large loaf pan
Bake until gold brown

Banana Frappe`
4 cups of sugar
1 large can pineapple juice (46 oz)
1 – 6 oz can of lemonade (frozen, undiluted)
1 – 12 oz can of orange juice (frozen, undiluted)
6 cups of water
5 mashed bananas
Mix together
(can add some frozen raspberries – add at the end)
Freeze into trays or small containers
1 hour before serving, put into punch bowl
and pour in Sprite or 7up

Cheesy Potatoes
8 medium potatoes
1 half stick of butter
1 can of “cream of chicken” soup
1½ cups of shredded cheddar cheese
1½ cups of sour cream
¼ cup of diced minced onions – (rehydrated)
¾ teaspoon of salt
½ teaspoon of pepper
½ cup of shredded cheddar cheese
1 cup of crushed “plain chips”
Cook potatoes in salted water until “crisp tender”. Let potatoes cool then remove skin and grate coarsely.
In a separate bowl combine melted butter, soup, 1½ cups of cheese, sour cream, salt, pepper and onions together
Fold mixture into potatoes. Pour into casserole dish and bake for 30 minutes in preheated at 350-degree oven
Sprinkle on remaining cheese and chips over the top and put back into oven until cheese melts.

Chicken Enchiladas
Chicken breast or tenders - Boiled until tender
1-½ cups of chicken broth
3 Tablespoons of butter
1 medium onion, chopped
2 packages of corn tortillas (white or yellow) torn into pieces
1 envelope of enchilada sauce
grated cheddar cheese
2 cans cream of chicken soup
1 can of diced green chilies
Cut up chicken and set aside
Brown onion in butter, add soup and stir until smooth.
Add enchilada sauce, chilies, and chicken broth and then add chicken.
Put ¼ cup of sauce in the bottom of a large casserole dish (9x13) put a layer of the tortillas, sauce and cheese. Repeat layers until all the ingredients are used – ending with a layer of cheese.
Bake at 325 for 30 minutes or until bubbly

Chicken Salad
2 cups of cold cubed chicken breast
1-cup celery – diced
1 Tbs lemon juice (bottle)
Salt and pepper to taste
Mix in –
½ cup of mayonnaise (Best Foods)
1 cup of red seedless grapes – cut in ½
½ cup of sliced salted almonds – (roasted)
Chill Well
Can eat plain or can be served on lettuce or on rolls

Chicken/Ritz Casserole
4-6 chicken breast – boiled
2 cans of cream of chicken soup
1-cup sour cream
1 ½ stacks Ritz Crackers – (crushed)
1 of stick of melted margarine or butter
Cut up cooked chicken into bite size pieces and place into the bottom of a 9x13 pan.
Mix together the soup & sour cream and spread on the top of the chicken
Cover with crushed crackers; pour melted margarine or butter all over the top
Bake at 350 for 30 mins

Cobbler
1 cup of sugar
1 cup of flour
2 teaspoons of baking powder
1 cup of milk
Dash of salt
¼ cup of butter (½ stick) melted
Melt butter in the bottom of a 9x13 pan
Mix sugar, flour, baking powder, salt and milk and pour butter into mixture
Pour over any fruit – fresh or frozen berries (add a little sugar to the berries), fresh or canned peaches, canned apples, canned cherries etc.
Bake at 350 for 30 minutes – until gold brown
Serve warm with Ice Cream

Corn Bread
2 cups of yellow corn meal
2 cups of flour
1 cup of sugar
2 Tablespoons of baking powder
2 teaspoons of salt
2/3 cups of oil
2 cups of milk
2 beaten eggs
Mix well and pour into greased 9x13 pan
Bake at 350 for 20-25 minutes, until golden brown
After you take out of the oven rub top with butter
Great with soup and stews!!

Frog Eye Salad
1 cup of sugar
2½ cups pineapple juice (drained off pineapple)
3 Tablespoons of flour
2 beaten eggs
1 Tablespoon of lemon juice (bottled)
½ teaspoon salt
cook until thick, cool!
------------------------
1- 1-pound box of Acini pepe 44 (noodles)
1 Tablespoon of oil
2 teaspoons of salt
cook pasta, oil and salt for 12 mins, drain and rinse to cool

2 cans pineapple tidbits (chunks are fine)
2 mandarin oranges
2 – 8 oz cartons of cool whip
2 cups of mini marshmallows
after the sauce and pasta are COLD, mix everything together – Fold in Cool Whip
This is a full recipe; I do this for get togethers
I just do ½ a recipe for my family

Hot Artichoke Dip
1 cup of mayonnaise (Best Foods)
1 cup (4 oz) grated Parmesan cheese
1 can (14oz) artichoke hearts, drained & chopped
1 can (4 oz) chopped green chilies, drained
½ Tablespoon of minced Garlic
Mix together all ingredients and blend well.
Spoon into shallow baking dish or 9” pie plate
Bake 20-25 minutes or until lightly brown
Serve with Triscuit Crackers and/or Wheat Thins,
or on French bread slices

Popcorn Balls
2 cubes of butter (use real butter)
1 cup of sugar
¾ cup of light corn syrup (Karo)
1-cup real heavy whipping cream
Air Pop about 5 qts of popcorn
Remove any kernels and set aside
In medium saucepan, melt butter, add sugar and corn syrup. Stir until mixed well; add whipping cream.
Bring to a boil and cook over medium heat to a soft ball stage. (Be careful not to scorch)
Pour over popped corn and form into balls
(Tip: Wear rubber gloves and rub with butter)
These are so GOOD!!!!!

4-6 chicken breast – boiled

1-cup sour cream
1 ½ stacks Ritz Crackers – (crushed)
1 of stick of melted margarine or butter
Cut up cooked chicken into bite size pieces and place into the bottom of a 9x13 pan.
Mix together the soup & sour cream and spread on the top of the chicken
Cover with crushed crackers; pour melted margarine or butter all over the top
Bake at 350 for 30 mins
Serve over cooked wide egg noodles

1-½ cups of butter
1 ½ cup of sugar
1 ½ cup of corn syrup (Karo)
melt butter, sugar and karo and boil for 4 minutes
Mix together:
½ box of Rice Chex
½ box of Golden Grahams
½ a bag of sliced almonds
½ a bag of coconut
